Yeast-free bread is a simple recipe you can use to make fresh homemade bread every day. This bread has a name - Irish soda bread. Apparently the Irish peasants did not want to spend a lot of time baking, so they came up with an easy way to make bread quickly. Everyone knows that in the heat, when baking soda interacts with acid, a chemical reaction begins. It is this reaction that underlies the recipe for yeast-free bread - kefir and soda, plus flour with baking powder. The result is delicious Irish bread without yeast.

  • 180 ml of kefir;
  • 75 g of premium wheat flour;
  • 75 g rye wallpaper flour;
  • 150 g whole grain flour;
  • 35 g wheat bran;
  • 1 tsp baking soda;
  • 1 tsp baking powder;
  • 1 tsp coriander seeds;
  • 2 tsp cumin;
  • salt, vegetable oil.

Pour dry ingredients into a bowl. First, the most useful ones are whole wheat flour, rye wallpaper flour and premium wheat flour, it is also called refined. Then add the wheat bran. You can only make a loaf of rye flour, but you want to diversify the taste of the bread, so the more ingredients, the more interesting.

The dough for bread rises in the oven from the interaction of fermented milk products, soda and baking powder, in our case the fermented milk product is ordinary kefir.

In a dry frying pan, fry (until the first haze appears) coriander seeds and cumin. Then we crush the seeds in a mortar, add the resulting powder to kefir.

Mix liquid and dry products, knead the dough for yeast-free bread first with a spoon. If you use a food processor to prepare the dough, which is very convenient in this case, use the hook attachment.

We knead the bread for several minutes, this is a very simple dough, so you won't have to knead it for a long time. Dough with rye flour turns out to be very sticky at first, but after a few minutes it stops sticking to the walls of the dish.

For baking bread, it is advisable to have dishes with thick walls. A small cast iron skillet is ideal. Lubricate the bottom and sides of the pan with cooking oil.

We spread the dough in a frying pan, level it. The layer should be about 2.5 centimeters thick.

Pour 2 teaspoons of rye flour into a fine strainer. We moisten the surface of the bread with cold water, shake the strainer over the frying pan so that the flour wakes up. Then with a sharply sharpened knife we make several oblique cuts about one centimeter deep.

We heat the oven to a temperature of 220 degrees Celsius, place the pan in the middle of the oven, bake the bread for 12 minutes. Then lower the temperature to 190 degrees Celsius and cook for another 40 minutes.

We take out yeast-free bread from the pan, wrap it in a linen towel for 2, 5 hours.
