So I want to return the summer, but the berries are almost gone, there is not much fresh greenery left on the site, the season of okroshka and beetroot is over. What is tasty and seasonal to please yourself and loved ones? Our tip: Make a squash soup for lunch. Depending on your preferences, it can be completely European or spicy Asian. In the first case, its delicate taste can be compared to the most delicate French puree soups. In the second, its rich taste will take you to the shores of Southeast Asia, where it is always sunny and warm.

Ingredients for Squash Soup

For the squash soup you will need:

  • Half a large or one medium zucchini, about - 1.5 kg;
  • Three small carrots - 150-200 g;
  • Turnip onions - 150-200 g;
  • Vegetable pepper (sweet not bitter) - 100-150 g;
  • Garlic - 2 cloves;
  • Vegetable oil;
  • Butter 1 tbsp a spoon;
  • Cream 2 cups;

From tools you will need a submersible blender.

Spices for the Asian version:

  • Hot chili or dried ground red pepper (cayenne);
  • Curry seasoning.

A method of making zucchini puree soup

The ease of making this squash puree soup is that the ingredients don't have to be cut into even pieces, then they still need to be chopped.

Put on a low heat 3 liters. a saucepan, preferably with a flat bottom, and pour vegetable oil on the bottom. As soon as the oil is warmed up, put the onion in a saucepan, simmer for no more than 2-3 minutes. Onions cannot be fried, otherwise they will give bitterness.

Add carrots to the stewed onions and simmer for another 3-5 minutes. As soon as the carrots have given color and sweetness, add pepper and simmer everything together for another 5 minutes.

We lay the zucchini, add a little (so that the zucchini gives juice) and simmer until fully cooked. I determine readiness by the color of the zucchini. As soon as they become transparent, turn off the heat under the pan and let cool slightly.

After the zucchini soup has cooled down, grind it with a blender, turning it into a homogeneous mass.

Pour a glass of cream into the resulting mass, add butter and put on a small fire.

Bringing to a boil, salt the puree soup to taste.

Once the soup has boiled, add the crushed garlic and turn off the heat.

You have got the most delicate squash soup that can be served as a European dish with croutons or fresh bread. You can garnish the plate with a drop of cream, fresh herbs, and croutons.

Asian version

If you love Asian cuisine, then by adding spices you can turn this dish into an original spicy soup that will shine with its bright taste and aroma. In my experience, most of those who have tried this option cannot identify the main ingredient - zucchini, and are convinced that overseas products were used.

To do this, add 1-2 pieces. chopped fresh chili at the time of frying vegetables, or 1 teaspoon of ground red (cayenne) pepper at the end of cooking. Also add 1 teaspoon of curry powder at the last moment.

As in the first option, turn it off and add the garlic. Enjoy your meal!
