Curd meatballs with carrots - tender vegetable cutlets with curd cheese, which are suitable for dietary and baby food and not only. I am sure that every adult is a little child at heart, and recipes like this (from childhood) will appeal to many.
This light vegetable dish made from inexpensive and readily available products is delicious despite its simplicity. We often forget that everything ingenious is simple, we prepare sophisticated dishes from exotic products, which, moreover, are not cheap, and the price does not always correspond to the quality. And in this recipe everything is clear and simple - sweet carrots, creamy semolina porridge, fresh cottage cheese. Believe me, these products will always remain delicious, it is almost impossible to spoil such a combination.

I cooked meatballs in a frying pan, they can also be baked in an oven or microwave. If you do not eat fried, then steam it, it will be delicious.
Carrots can be stewed, stewed in boiling water, or prepared from ready-made carrots, cooked in their uniform, so you can even save time on cooking.

Ingredients for Carrot Curd Balls
- 300 g carrots;
- 200 g of cottage cheese;
- 1 chicken egg;
- 80 ml cream;
- 20 g butter;
- 45 g semolina;
- 20 ml of vegetable oil;
- table salt.
Method for making curd balls with carrots
Three carrots on a vegetable grater. I use a Berner grater, it turns out thin straws, almost like a coarse vegetable grater, but slightly larger.
Pour vegetable oil into a deep frying pan, put carrots, pour half a glass of boiling water. Cover the pan with a lid and simmer the carrots for 15 minutes until soft.

Cooking a quick thick semolina porridge. Pour semolina into the saucepan.

Pour in the cream and stir. We put the stewpan over low heat. While stirring, heat to almost boil. As soon as the porridge thickens, put a piece of butter, remove the stewpan from the stove.

Cool the stewed carrots and semolina almost to room temperature. Put carrots, semolina porridge in a bowl, add cottage cheese, break a chicken egg, add salt to taste. If the cottage cheese is low-fat and with grains, then wipe it through a sieve, it will turn into a homogeneous mass.

We knead the dough. If it seems to you liquid, you can pour in a little dry semolina or a spoonful of wheat flour.

Lubricate the pan with vegetable oil for frying. From the dough we form oval curd balls with carrots, put in a preheated pan, fry for 4 minutes on each side until golden brown.

Serve on the table with sour cream and fresh herbs. Bon Appetit!

A thick creamy sauce can be prepared with curd balls with carrots. Fry a tablespoon of wheat flour in a saucepan until golden brown, then add one tablespoon of butter. When the butter melts, pour in cold cream with a fat content of 10%, salt. Bring to a boil, stirring the sauce with a whisk to prevent lumps from forming.
The sauce can be seasoned with grated nutmeg or finely chopped herbs.
