Oven-baked stuffed zucchini is called dolma in the East, from the Turkic word dolmak, which means "to stuff". Usually, meat or rice is used for the filling, and grape leaves, bell peppers, quince, tomatoes can serve as a shell. As a child, I did not know this tricky name, but vegetables according to this recipe were cooked in the house quite often.
Zucchini is an amazing vegetable, its yield often scares me. Zucchini caviar, vegetable stew, pancakes and zucchini cutlets appear with enviable regularity in the autumn menu. For a change, I advise you to stuff them with minced chicken fillet and stewed vegetables, and cook crumbly rice for a side dish. You will get a delicious and nutritious second course - with sour cream sauce, what you need for dinner.

Ingredients for Oven-baked Stuffed Zucchini
- 650 g medium-sized zucchini;
- 115 ml olive oil;
- 5 g salt;
- 15 g white sesame seeds:
For minced meat:
- 400 g chicken fillet;
- 100 g of onions;
- 230 g carrots;
- 150 g sweet pepper;
- 30 g of celery greens;
- 1 pod of hot pepper;
- 20 ml olive oil;
- 5 g salt;
- ground paprika, black pepper, oregano.
Method of cooking stuffed zucchini baked in the oven
Peel medium-sized zucchini. Cut into several parts with circles about 4-5 centimeters high. Scrape out the core with the seeds with a teaspoon, leave the bottom 1 centimeter thick.
In a wide saucepan, heat water to a boil, add salt. Blanch vegetables in portions for 5-7 minutes, take them out, put them on a sieve so that the water can drain.
Making minced meat
Finely chop the onions. Saute in well-heated refined olive oil for frying.
When the onion acquires a caramel shade, add the coarsely grated carrots. Fry the onions and carrots for 7 minutes.
Add diced bell peppers for flavor. Any color of pepper, as long as it is fleshy.
Fry peppers with carrots and onions for 5 minutes.
Chop the chicken fillet with a sharpened knife across the fibers into small cubes or chop in a meat grinder. It is better to use the attachment with large holes so that pieces of meat can be felt in the minced meat.
Add salt, oregano, ground paprika and finely chopped celery. We clean the pod of hot pepper from seeds and partitions, cut into rings, add to the rest of the ingredients.
Fry the filling for a few more minutes.
We turn on the oven to heat up to a temperature of 200 degrees Celsius.
We fill the zucchini with minced chicken and vegetables, make a large slice, it will be tastier. Pour olive oil into a frying pan, put the zucchini.
Place the pan in the heated oven on the middle shelf. Since the ingredients are half-cooked, you do not need to bake for a long time, 20-25 minutes is enough.

I advise you to prepare sauce for stuffed zucchini baked in the oven: pass a clove of garlic through a press, finely chop a bunch of dill and a few green onions, mix everything with salt and sour cream.
