Edible tuberous formations of Stahis, or Chinese artichoke are used as vegetables in many countries of the world. They are eaten boiled, fried and pickled. The plant is widely cultivated in Southeast Asia, China, Japan, Belgium and France.

At the beginning of the 20th century in our country, stachis nodules were ubiquitous for sale, but later the culture was lost. At the end of the twentieth century, the cultural forms of stachis were brought back to Russia from Mongolia.

Stachis bushes, up to 60 cm high, are a bit like mint, but their roots at a depth of 5 to 15 cm are equipped with a large number of nodules, similar to white oblong shells; their weight is 4-6, sometimes up to 10 g. They are used for food.

The use of stachis in cooking

Stakhis is delicious. When cooked, it is somewhat reminiscent of asparagus, cauliflower and even young corn. It is simple to cook it: the nodules, thoroughly washed under a strong stream of water, are boiled for 5-6 minutes in salted boiling water. Throwing in a colander, lay out on plates; you get a hot dish that is nice to season with butter.

Stachis can be eaten fried, pickled and salted. It is also original on the festive table. It can be used as a side dish for many main courses. Stachis is added to soups and vegetable stews. The dried vegetable can be stored for years. Stachis crushed into flour can be sprinkled with sandwiches, seasoned with sauces. Children chew raw nodules with pleasure.

For current consumption, fresh Chinese artichoke nodules should be refrigerated in bags. For long-term storage, I sprinkle stachis tubers with dry sand, put them in a foam plastic box with a lid and bury them in the ground to a depth of 50-60 cm. So they will last until spring, remaining fresh, as if they had just been dug.

Useful properties of stachis, or Chinese artichoke

Stachis is completely starch-free and is essentially an ideal food for diabetes. The nodules have an insulin-like effect. In addition, stachis is curative for diseases of the respiratory tract, gastrointestinal diseases. It normalizes blood pressure, has a calming effect on the central nervous system.

Being an annual, the stachis nevertheless grows annually in the old place from the nodules remaining before winter, which cannot be collected completely.

So stachis is a cold-resistant culture. Even in the frosty winters with little snow, the nodules never died in our country, remaining in the ground without any shelter. Shoots grown in spring can be transplanted with roots like seedlings.

They begin to breed stachis in the fall or spring after the snow melts. You can even plant in frozen ground, punching holes with a crowbar. The depth of planting tubers in the soil is 7-10, the distance between bushes is 25-30, between rows 40 cm.

The stachis yield is significant. On non-generous clay soils in the north of the Moscow region with 18 m², I collect up to 45-50 kg of nodules. Perhaps, on looser lands, the harvest will be even more significant.

It is only necessary to remember that stachis is not dug until the second decade of October. An earlier harvest does not give a normal harvest, the tubers are small, since their main growth occurs in September.

I have been growing stachis in the same place for 6 years, without reducing the yield. It bears fruit successfully in partial shade, and nodules are larger under trees and bushes.

After collecting stachis, I dig up the plot, having previously scattered ash, peat, sand and rotted manure. This is where the autumn worries end. Until the next harvest, I do not work on this site. Unless in a very dry summer I water it 2-3 times. I did not observe diseases and pests on stachis. He successfully slaughters the weeds himself.

There is no need to be afraid of clogging the garden with stachis: it is enough in the spring to dig up the place of the site where it is undesirable. But it is advisable to use stachis for weed control, keeping it in the cleared area for 2-3 years; it suppresses even the ineradicable dream.

I think that stachis has every reason to become one of the most common food products.
