This charlotte is also called "five-minute apple pie", although it is baked not 5, but all 25 minutes - but it is prepared very quickly and easily. That is why the biscuit charlotte with apples is the most favorite cake during the autumn tea drinking period. What to bake quickly and with a minimum of products for a family for breakfast, children for an afternoon snack; to the arrival of unexpected guests? Of course, charlotte! While you chat at the table, just the charlotte will ripen.

I offer you a basic recipe for charlotte, and you can vary it countless times!

Firstly, the dough for charlotte can be made not only from wheat flour, but also with the addition of corn, oatmeal, buckwheat, nut flour (half with wheat). Every time you get a charlotte with a new taste!

Secondly, in addition to different types of flour, you can add various spices to the dough: cinnamon or vanillin; turmeric, ginger! You can even pour in cocoa, there will be a chocolate charlotte - but the classic version, in my opinion, is better. But if you put a couple of spoons of poppy seeds or chopped nuts into the dough, it turns out very tasty!

Then, not only apples, but also any seasonal fruits and berries can be added to the cake. I tried charlotte with pears and plums; with cherries and apricots, raspberries, strawberries! And each option is tasty in its own way. But let's start with apple charlotte.

  • 3 large eggs;
  • 150-180 g sugar (incomplete 200 gram glass);
  • 130 g flour (1 glass without top);
  • 1 tsp baking powder (or 1 tsp. soda, extinguish with 9% vinegar in flour);
  • 1 / 4-1 / 2 tsp cinnamon;
  • 2-3 st. l. icing sugar for decoration;
  • 5-7 medium apples.

Method of making charlotte with apples

Charlotte tastes best with sweet and sour fruits of green and yellow varieties: Antonovka, Granny Smith, Simirenko, Golden. Loose apples are not very suitable for this cake: they will "melt" in the dough, and the taste will not be the same.

Since the dough for charlotte is biscuit, you need to bake it immediately after cooking so that the lush mass does not settle. Therefore, it is better to prepare the apples and the form in advance. We also take eggs out of the refrigerator in advance: when they are at room temperature, they are whipped into a more fluffy mass.

Wash the apples, peel them. If you are in a hurry and the peel of the apples is not very tough, you do not need to peel it. But still I advise you to take a little more time and peel the peel, then the charlotte will turn out to be much softer!

You can cover the charlotte dish with foil so that the top does not burn while the middle is baked. The exact temperature will be different for each oven, so be guided by the type of cake: when the crust turns golden brown and the wooden skewer comes out of the dough dry, the charlotte is ready.

Let the charlotte cool in the oven for 5-10 minutes: if you take it out right away, the biscuit may settle a little from the temperature change. Then let it stand in the form for another 10 minutes: it is easier to remove the parchment from a cooled cake than from a warm one.
