Ingredients for beef stew with prunes
- 500-600 g of pitted and fatless beef;
- 1 large carrot or 2 medium;
- 2-3 medium-sized onions;
- 50-100 g pitted prunes;
- 2 tablespoons tomato paste (or half a glass of tomato juice)
- 2-3 glasses of water;
- 1 tablespoon of topcoated salt
- 10-15 pieces of black peppercorns;
- 1-2 bay leaves;
- refined sunflower oil for frying.
Method for preparing beef stew with prunes
Cut the beef into cubes about 2x2 cm, it is more convenient to do this while the meat is not completely thawed.
We clean and wash the vegetables. Chop the onion finely or into quarter rings, grate the carrots on a coarse grater.
Heat the sunflower oil in a frying pan with high sides, add the onion and sauté, stirring occasionally, over medium heat until soft.
Then add the grated carrot to the onion and continue, stirring occasionally, sauté together.
After 3-4 minutes add meat to the carrot and onion company. Fry a little, stirring occasionally, until the color changes.
Add 2–2.5 cups of water to the pan so that the meat is covered, cover and simmer over medium heat for about 30–35 minutes. The gravy should boil slowly.
When the meat is tender, it's time to add the prunes! Both dried and smoked are suitable, but the first option is more to my taste: it is softer and the aroma is more pleasant. After rinsing the dried fruits under the tap, pour a dozen prunes into the pan and mix.
Stir the tomato paste in half a glass of water and pour it into the pan. Instead of pasta, you can use tomato juice or pureed fresh tomatoes - then there is no need to dilute with water.
Season with salt and spices: peppercorns and bay leaves. Stir and simmer for a few more minutes, then turn off the heat. A fragrant, appetizing meat sauce with prunes is ready!
