And how do you like the idea of serving … an accordion for dinner? Not the accordion as the button accordion, but … the accordion potato! This is a very original and, moreover, simple recipe for delicious baked potatoes with bacon under a cheese crust. If you want to have a hearty snack and surprise guests at friendly gatherings, accordion potatoes with smoked bacon and cheese are what you need!

Ingredients for accordion potatoes
We take potatoes of the correct oval shape, small in size - according to the number of people, or better - 2-3 for each, because everyone will want additives. For example, for 2 persons:
- 4 potatoes;
- 100 g smoked (or salted) lard;
- 100 g of hard cheese;
- 1 clove of garlic;
- 1-2 tbsp. l. mayonnaise or sour cream;
- a few sprigs of parsley.

Method of cooking accordion potatoes
Wash the potatoes very thoroughly with a dish sponge (hard side) or a brush, as there is no need to peel the skin.
After drying the potatoes on a towel, we make cuts across, but not completely, after 3-4 mm. If you accidentally cut off a piece of potatoes, it's not scary, you can fix it with a toothpick. Only then, before eating, take it out.

Cut the bacon and half of the cheese into slices, as thin as possible, the width of the potatoes.
Put a slice of bacon into the cuts on the potatoes. You can alternate lard and cheese, it's even tastier and more original.

Put the potatoes on a baking sheet, cover it with a sheet of parchment paper, and put in the oven. We bake at 180-200 ° С for 40-45 minutes, until the potatoes are soft. You can check the readiness by gently piercing the potatoes with a toothpick.

But that's not all. We take out a baking sheet with potatoes, pour each with sour cream or mayonnaise, sprinkle with garlic and cheese, grated on a fine grater. And put it back in the oven for a few more minutes until the cheese melts.

Taking out the accordion potatoes, decorate with parsley and immediately, hot, serve them to the table. Bon Appetit!
