Method for preparing thick minced meat sauce for pasta
We do it. Cut the onions into thin half rings. Press the garlic cloves with a knife, chop finely or pass through a garlic press. Heat refined olive oil in a frying pan, add butter. Throw chopped vegetables into hot oil, sauté until transparent.
Next, add minced meat to the sautéed vegetables, in this recipe pork. You can make minced meat from any meat depending on your culinary preference.
We fry the meat with vegetables for 10 minutes, stir so that the minced meat does not stick together.
Then add the tomato puree. Ready-made tomato sauce is fine, but in my opinion, it is more useful to grind a few ripe tomatoes in a blender.
Add red bell pepper cut into small strips to the tomato puree.
Pour ground sweet paprika and curry powder, table salt to taste, and 1 teaspoon granulated sugar into the pan to balance the flavors.
Cover the pan with a lid and simmer over moderate heat for 20 minutes.
In a bowl, mix 100 ml of cold water, wheat flour and sour cream, stir so that there are no lumps of flour.
When the meat is almost ready, add the sour cream sauce, bring it to a boil again, cook for another 5-7 minutes.
1-2 minutes before cooking, throw finely chopped greens into the sauce - cilantro, parsley or dill, in a word, the one that you like best.
Mix and you can remove the finished dish from the stove.
By the time the sauce is ready, cook the pasta, pour it with high-quality extra virgin olive oil of the first cold pressing. We leave a little water in which they were cooked in a saucepan with pasta, it will be tastier this way.
Pour the sauce over the pasta and serve immediately. Bon Appetit!
By the way, according to this recipe, you can prepare a vegetarian sauce, replacing the minced meat with minced meat from boiled forest mushrooms, and sour cream with soy cream.
