Carefully wash the sweet potatoes with a brush, cut off the sharp ends. You don't need to peel the tubers for this Baked Sweet Potato recipe, wash well enough.
Further important is the cutting process. Those who know how to cook accordion potatoes will cope with this easily. I explain to the uninformed: we put 2 Chinese sticks on the board, between them a sweet potato. With the left hand we firmly press the tuber to the sticks and the board, in the right hand we take a sharp wide knife, cut perpendicular to the board. Put the sweet potato on a plate and pour it with high-quality extra virgin olive oil.



We take the potatoes in hand, carefully open them, sprinkle with coarse salt and freshly ground black pepper.
We wrap each tubers in foil separately, put on a baking sheet. We heat the oven to a temperature of 210 degrees Celsius.
We send the baking sheet to the preheated oven for about 25 minutes, the baking time depends on the size of the tubers, for large ones you may need a little more. At this stage, you need to bring the sweet potato almost to readiness, while it should remain, as it were, a little undercooked.



Meanwhile, in a bowl, mix softened butter, fragrant honey, finely chopped walnuts and soy sauce. If you're making baked sweet potatoes for a big group, it's best to use a mixer to beat the ingredients.

We unfold the foil, put the butter with nuts and spices on the potatoes, carefully distribute the mixture so that the pieces of nuts fall between the slices.

We heat the oven to the maximum temperature or turn on the grill. We put a baking sheet in a hot oven for 10-12 minutes to bake the sweet potato until golden brown and cook until tender.

Serve hot baked sweet potatoes on the table, garnish with curly parsley before serving and pour over the butter that has gathered in the foil during baking.
