There are many cobb recipes. In my opinion, its most important quality is that everyone can order a set of products to their liking - cobb without eggs, cobb without onions, cobb without bacon. In my recipe for cobb with chicken, arugula and chili, I really like this combination. A slightly sour dressing of yogurt, paprika and olive oil is perfect for it.

Ingredients for Cobb Chicken and Arugula Salad

  • 80 g arugula;
  • 200 g chicken fillet;
  • 50 g lettuce onions;
  • 2 boiled eggs;
  • 1 avocado;
  • ½ lemon;
  • 1 chili pepper;
  • 40 g parmesan;
  • 10 ml balsamic vinegar;
  • olive oil, pepper.

For refueling:

  • 100 g Greek yogurt
  • 20 ml olive oil;
  • ½ teaspoon smoked paprika powder;
  • sea salt.

Rinse the fresh arugula leaves, dry in a salad dryer, sprinkle with extra virgin olive oil and spread on a large plate in an even layer. I advise you to cook cobb salad in portions.

Cut the chicken breast fillet into thin strips, salt, pepper, fry in refined oil for several minutes until golden brown. Put the fried meat on a paper towel so that the excess oil is absorbed into the paper. Put the chicken fillet on a plate, lay out the meat in a strip.

Cut white salad onions into thin half rings, sprinkle with salt, pour with balsamic vinegar. Place a strip of pickled onion next to the chicken.

Peel the hard-boiled eggs, rub the egg white and yolk on a grater separately. Put a strip of protein on a plate.
