Teriyaki is a Japanese way of roasting meat or fish in a sweet sauce. The name itself comes from the Japanese words "teri" - shine, and "yaki" - fried. In Western countries, teriyaki sauce is often served separately with a fried dish. In this recipe, we cook sweet and sour teriyaki chicken with sesame seeds. The original recipe contains soy sauce, sugar and sake in the stir-fry sauce. You can change the ingredients, because we do not adhere to strict Japanese canons. For example, let's take honey instead of sugar, and replace sake with rice or dry white wine. Believe me, such changes in the taste of fried chicken are not reflected, perhaps, the quality of soy sauce will be more noticeable. Here I advise you to choose meticulously, do not be lazy to visit a rich oriental shop in the market.

- 300 g chicken fillet;
- 1 tablespoon of soy sauce
- 1 tablespoon honey;
- 2 tablespoons of rice wine;
- 1 teaspoon dry ground ginger
- 1 tablespoon white sesame seeds
- sea salt;
- olive oil.

Making the sauce. Pour soy sauce into a bowl, add liquid honey. Pour dried ginger into a bowl. In this teriyaki chicken recipe, it can be replaced with grated fresh ginger (2 teaspoons), it will be tastier, unfortunately, I had to do with dried ginger this time.
Add rice wine, grind the ingredients to make the sauce homogeneous.



Dry the chicken fillet with a paper towel, cut into narrow long strips across the fibers.

Put the chopped fillet in the sauce, mix thoroughly and put the bowl in the refrigerator for 20-30 minutes. During this time, thin slices of chicken will marinate perfectly.

It is best to fry in a deep non-stick frying pan, ideally in a wok. If wok is not available, any high-sided skillet will work for the teriyaki chicken recipe. Pour 2-3 tablespoons of olive oil into a frying pan, heat it up a lot, add the marinated meat.
We fry on high heat, it will take only a few minutes. Once the moisture has evaporated, the chicken becomes golden and shiny, sesame seeds can be added. It is better to stir during the frying process by shaking, if this masterly method has not yet obeyed you, then an ordinary spatula will also work.
We put white sesame seeds in a pan, you can slightly diversify and mix white and black sesame seeds, there is practically no difference in taste.



Mix, fry everything together for just a minute and remove the pan from heat.
