Oven baked sea bass with vegetables is a great idea for a light fish dish for lunch or dinner. First of all, novice cooks have the question of how to clean the perch from the scales and not stain the whole kitchen with fish scales? There are several folk and fishing methods, each of which is convenient in its own way. Firstly, fish can be cleaned in a large transparent plastic bag - the scales remain in it. Secondly, place the perch in a bowl of water, clean it with a small knife under water, so the scales do not fly in all directions. Thirdly, to clean under water too, but instead of a knife, take a fork, in my opinion, this method is the most convenient. I think there are many more wise popular decisions, I still know these three. I advise you to take the frozen fish out of the freezer 3-4 hours before cooking and leave it on the bottom shelf of the refrigerator.

Ingredients for sea bass
- 1 sea bass weighing about 600 g;
- 1 sweet red pepper;
- 2-3 tomatoes;
- 2 onions;
- olive oil;
- dried sage leaves;
- salt, ground black pepper;

Cooking sea bass in the oven with vegetables
So, we take sea bass, thaw frozen, just rinse fresh with cold water, cut off the head. Cut off the fins with scissors, leave the tail. Be careful, the fins are prickly, if you handle the fish inattentively, you can get pricked.
We fill the basin or kitchen sink with cold water, put the perch in the water, and press the tail to the bottom with our hand. We clean off the scales with a fork, starting from the tail, and gradually moving towards the head. Turn the carcass over and also clean it on the other side.
We cut the abdomen, remove the insides, thoroughly rinse the fish carcass under running cold water. Put the cleaned and washed fish on a paper towel, dry it.
We make oblique cuts on both sides of the sea bass so that the juices and spices soak it well. We rub the carcass outside and inside with a mixture of salt and ground black pepper.
Pour high-quality olive oil on the fish - the oil should be tasty and thick, so you get a golden brown crust.
Peel the onion heads, cut them into rings or half rings about half a centimeter thick. Lubricate the baking dish with olive oil, spread the onion.
Cut the tomatoes into slices, put them in a mold.
We clean the pod of red sweet pepper from the seeds. We cut off several thin and long strips, put them into the fish cuts on one side. Cut the remaining pepper into cubes, pour into a mold. Pepper the vegetables, sprinkle with salt to taste, put the fish on top, add a small handful of dried sage leaves.
We heat the oven to a temperature of 200 degrees Celsius, put the dish with fish in the preheated oven for 20 minutes. Oven baked sea bass with vegetables is ready. We take the form out of the oven, leave it for 7-8 minutes for the fish to rest and serve. Bon Appetit.
