Buckwheat porridge with chopped eggs and onions - a side dish or a full-fledged main course, decide for yourself. Most importantly, it is delicious, both hot and cold. If you are tired of empty porridge for a side dish, even if abundantly seasoned with butter, cook buckwheat with eggs and onions according to this recipe, you will not regret it! Just like rice, pasta, barley or bulgur, buckwheat goes well with many foods. It can be cooked with meat, chicken, vegetables, cooked, baked, stewed. There are many sweet recipes with dates, nuts, raisins and fruits. However, this simple recipe wins many, it is not for nothing that they say that everything ingenious is simple!

- 150 g buckwheat;
- 2 large onions;
- 4 chicken eggs;
- 1 teaspoon ground sweet paprika
- a bunch of green onions;
- 20 g melted butter;
- 15 ml of vegetable oil;
- salt, white pepper.
Method of cooking buckwheat porridge with chopped eggs and onions
We cook buckwheat. Put ghee in a saucepan with a thick bottom, heat it up. Pour cereals into the melted butter, fry until golden brown over low heat for several minutes. Pour 300 ml of boiling water, pour in a teaspoon of salt (without a slide). After boiling, close the pan with a lid tightly, cook for about 25 minutes over low heat. If there is no ghee, then pour in a little refined vegetable oil and add 1-2 tablespoons of ordinary butter. In this case, fry quickly so that the oil does not burn.

Cut the peeled onions very finely. Fry the onion in hot vegetable oil for about 12 minutes, I advise you to immediately salt it so that the onion will release juice, so it will be tastier.

Pour the boiled buckwheat into a large bowl. The grains pre-fried in butter are saturated with the aroma of butter, and buckwheat is very crumbly.
Add the fried onions, stir and cool slightly.
Cook eggs hard-boiled for about 8-10 minutes after boiling water, cool in ice water, clean, chop finely. Add chopped eggs to buckwheat and onions. We leave half of the egg to decorate the dish.



Season with finely chopped green onions, sprinkle with ground sweet paprika, pepper with freshly ground white pepper. White peppers are not as harsh as black ones and, in my opinion, are more suitable for this dish. No more seasonings are needed, enough oil is added in the previous steps of the recipe.
