Pour cold milk, mix the ingredients with a whisk.

We wash the leeks with running water - soil may get caught between the leaves. Cut the washed leek into thin rings. Lubricate the pan with vegetable or olive oil, add butter and chopped leeks. Fry for 2-3 minutes over low heat.
Knead chili pepper between palms, cut off the tip, shake out the seeds. Cut the chili into rings, put in the pan. If you don't like hot food, then skip this recipe step.
Cut the squeezed spinach into strips, send it to the pan next to the chili, sprinkle with a pinch of salt.



Cut the small tomatoes in half. Fry the herbs for 2 minutes, add the tomatoes, put them cut down. For this spinach omelet recipe, cherry tomatoes are good and can be cooked whole.

Gently pour in the egg-milk mixture, tilt the pan so that the omelet spreads in an even layer. Cover the pan with a lid and cook over low heat for no more than 3 - 4 minutes. Cooking time depends on the diameter of the pan and therefore on the thickness of the omelet.
