Autumn is coming, and so is the mushroom rush. The main mushrooms collected - both in the European part and in Siberia, are approximately the same: cepes, bobcats, aspen mushrooms, chanterelles, boletus, mushrooms, russula, milk mushrooms, mushrooms, mushrooms, honey mushrooms. Other mushrooms are collected depending on the region, the advancement of the mushroom picker or his penchant for risky experiments. And their name (other mushrooms) is legion. As, however, and mushroom pickers, which every year there are more and more. Therefore, there may not be enough for all known mushrooms. It is necessary to study and little-known. And I know for sure that there are very worthy representatives among them. I'll talk about little-known, but tasty and healthy mushrooms in this article.

Liver mushrooms
For example, when it is still hot, a mushroom grows in the lower part of the trunk of an old oak tree, which is not like anything edible and causes strange associations. Not only I, apparently, have such associations, because the mushroom is called liverwort (fistulinus vulgaris), sometimes it is called "mushroom liver".


An absolutely amazing mushroom with a reddening pulp in the air, a reddening juice and a slight sour taste due to the high content of vitamin C. Young mushrooms are more spherical and dry, with age they stretch out with a wide tongue or fan, and the top becomes slimy and shiny.
This slimy skin must be removed during cooking. The fried liverworm is delicious, I have not tried it in a different form yet, the mushroom is not found in large quantities. I will also find - pickled, very unusual color in his flesh.
The main thing is that it is impossible to confuse it with any other mushroom, and it can be seen from afar - walk and look at the old oaks closer to the base. It grows in all regions where there are oaks. This mushroom destroys wood, so picking it and eating it is a very useful act.
Mushrooms-flowers
Although, if you walk and look only at the oak trees, you can miss another interesting mushroom, which not only does not catch your eye, but with its whole appearance shows that it does not deserve absolutely any attention. At first glance, it seems that he is old and, probably, rotten. I took a picture of him, because he looks like beautiful dark flowers.


I shouldn't have taken it right away. Chanterelle (Horn-shaped funnel) is one of the most delicious mushrooms. I discovered these mushrooms in August and they grew, getting underfoot, until mid-December. There were no noticeable frosts, they easily survived at night (-5) under the foliage.
The mushroom itself is a dark brown, thin-walled funnel. There is no wormy, like an ordinary chanterelle. However, the worm has nowhere to settle there.
Information about the mushroom on the Internet is the most enthusiastic, including information about immunomodulatory and antitumor properties, but I can only confirm the taste and smell from personal experience.
Very tasty fried with onions, although scary in appearance. Dried mushroom powder adds sophistication to baked and stewed meat, any sauce. And how good and aromatic the cheese soup with these mushrooms is! In general, the combination of black chanterelles with cheese is very beneficial. The smell is brighter during heat treatment and drying, and the fresh mushroom does not smell much.
Sometimes you can confuse only with a gray chanterelle, edible, but tasteless. And it is growing, as they say, throughout Russia.
Hedgehog mushrooms
Mushrooms, like no other forest products, require attentiveness, concentration and slowness. Each time it takes some time to adapt, so that the eyes begin to distinguish masterfully camouflaged mushrooms from dry foliage. There is such a mushroom sitting in moss and in the leaves - try it, find it!


Above - a chanterelle-chanterelle, only unusually large and thick. So what! Now there are many fat ones - why can't mushrooms? But, if you turn it over, a touchingly funny "hedgehog" wrong side opens, which has nothing in common with the structure of the usual mushrooms.
This is a yellow hedgehog, a very good mushroom. It grows in families, like chanterelles, in one place you can immediately pick up a basket. And it tastes like chanterelles. The only negative, in my opinion: his very decorative needles (my husband called them "architectural excesses") crumble at the first touch.
You bring home mushrooms, all in these stuck "needles", you clean it for a long time, scolding yourself with bad words for contacting them, but then you get a beautiful roast from light and plump mushrooms. Sometimes patience or time is not enough to completely clean it, it turns out unpresentable, however, it does not affect the taste at all.
It is also a fairly common mushroom that grows all over Russia, it is impossible to confuse it with anything inedible.
Egg mushrooms
While it is warm in the forest, funny large white "eggs" are found, from which bright orange mushrooms later hatch. They do not meet in families, therefore, having met first an egg, and then a mushroom, it is not so easy to understand that they are one and the same. But after carefully examining and picking one and the other, you can figure it out.


Ovary (Caesar mushroom) is quite consistent with the epithet "Caesar" - the look, taste, smell. Perhaps even the boletus in comparison with him turns pale and stewed.
The leg and cap are dense, of a beautiful egg-yellowish color, and the smell is similar to hazelnut with fruit. Exceptionally tasty in all types - fried, boiled, pickled. It does not lose color during heat treatment, it looks elegant and bright in a jar, causing convulsive swallowing by its very appearance.
Unfortunately, it grows where it is warm - the North Caucasus, Crimea, Primorye. Although some argue that they collected it in the suburbs. All hope for global warming.
It cannot be confused with anything - the yellow color of the legs and pulp distinguish this mushroom from inedible ones.
About the deceit of mushrooms
In mushroom places, getting into excitement, almost everyone forgets to look around the surroundings and get attached to some landmarks on the terrain. The insidiousness of mushrooms in relation to luring into the thicket of gullible mushroom pickers is reflected in fairy tales, works of classics and reports of the Ministry of Emergencies. So you have to be careful. Better - with a compass, and even better - with those who know the area.
It's good when there is a connection in the forest, you can immediately look at the Internet about an incomprehensible mushroom, but this is still a great success even for the European part, and there is nothing to say about the Trans-Urals.
Mushrooms are cleverly camouflaged. Edible - under inedible and vice versa. It is advisable to first look about the deadly poisonous, and not touch them, and not even kick them. Collect those mushrooms that are of interest in a separate container, put them on cling film at home and carefully study all the information on the Internet.
And the most important thing is not to be greedy! There is no complete certainty - it is better to throw it out. If you have confidence, but no experience of use, cook and try a little, and you can eat the rest tomorrow.
