- Servings: 6-8
Ingredients for cottage cheese cookies
- 200 g of cottage cheese;
- 100 g sugar;
- 100 g butter;
- 1 egg;
- 1 cup wheat flour
- 1 teaspoon baking powder
- salt, icing sugar.
How to make simple cottage cheese cookies
Cut the butter for the recipe for cookies with cottage cheese into small cubes, leave at room temperature - the butter should melt a little. You can also place a bowl of chopped butter in a bowl of hot water for a few minutes. Add fine granulated sugar to the melted butter. Grind butter with granulated sugar or beat with a mixer for a couple of minutes.

Next, add the curd. I advise fat, tender curd without grains. If there are still grains, then wipe through a sieve twice or pass through a meat grinder. Mix cottage cheese with mashed butter with a spoon or spatula.
Before adding the egg, I usually add flour to the dough, about 1/4 of the total. So, when whipping, the butter is not cut off, the dough is smooth and homogeneous. This is not a required step in this cottage cheese cookie recipe, but it is desirable, especially if you are mixing the ingredients in a food processor.
Add a large chicken egg to the liquid ingredients. Beat with a mixer for a couple of minutes until the mass is smooth.

Mix the remaining wheat flour and baking powder well, sift and add in small portions to a bowl of liquid ingredients.

We knead the dough. It should turn out to be quite tight, if it is liquid, then add a little more flour, if it is very tight, then you can pour a tablespoon of kefir, milk or cold water. Put the finished dough into a bun, put in the refrigerator for 15 minutes.

Put a sheet of parchment on a baking sheet, sprinkle the parchment with vegetable spray or grease with a drop of oil. Pinch off small pieces of dough. Roll the balls between the palms. We spread on a baking sheet, leave 3-4 centimeters between the balls. To make the cookies the same, I advise you to weigh each piece on a scale, optimally about 25-30 g per piece.

We slightly press the balls with our hand so that they flatten a little and send them to the oven heated to 180 degrees Celsius. We bake for 10-14 minutes, making sure not to burn! The baking time depends on the weight of the product and the individual characteristics of your oven. In general, when the cookies have risen and are slightly browned, you can remove the baking sheet from the oven. Cool on a baking sheet, sprinkle with powdered sugar through a strainer.

Delicious cookies with cottage cheese from simple ingredients are ready. We serve it with a cup of coffee or tea, although it is also very tasty with homemade compote or milk. Bon Appetit!
