Hot-harvested black currant with sugar for the winter retains the maximum amount of nutrients. Only selected currants are suitable for harvesting berries in this way. We sort out the berries, remove the dry ones, with signs of spoilage, pick the berries from the branches.
We send the crop to a bowl of cold water, soak it. We change the water several times, remove the floating debris, at the end pour the berries into a colander, rinse with running water.
Rinse clean berries with boiling water, shake off the water.
Pour the berries into a bowl, add granulated sugar, mix.
Take a wooden potato crush and gently knead the berries.
When the currants let out the juice, transfer the berry puree to a stainless steel or enameled stewpan. If there are whole berries left, then they also need to be crushed.
We put the saucepan on the stove, quickly heat it up over high heat, until the currants with sugar begin to "puff" for the winter, you do not need to bring it to a boil. The mass must be stirred, otherwise it will burn.
