Hot-harvested black currant with sugar for the winter retains the maximum amount of nutrients. We send the crop to a bowl of cold water, soak it. We change the water several times, remove the floating debris, at the end pour the berries into a colander, rinse with running water.

Rinse clean berries with boiling water, shake off the water.

Pour the berries into a bowl, add granulated sugar, mix.

Take a wooden potato crush and gently knead the berries.

When the currants let out the juice, transfer the berry puree to a stainless steel or enameled stewpan. If there are whole berries left, then they also need to be crushed.
