Peach jelly with strawberries - a fragrant dessert, refreshing and light. It is so nice to take out a mold with a cold sweet and sour dessert from the refrigerator on a hot summer day and enjoy the bright taste of ripe fruits and berries. In this recipe, we are preparing fruit jelly with powdered gelatin. This type of gelatin needs to be soaked for a while before cooking, otherwise everything is simple. If you don't have a kitchen scale, use 3 large peaches, a glass of fresh strawberries, a tablespoon of gelatin, two tablespoons of honey, and half a glass of cold water.

Ingredients for Strawberry Peach Jelly
- 250 g peaches;
- 200 g strawberries;
- 30 g of liquid honey;
- 15 g of powdered gelatin;
- 100 ml of water;
- fresh berries and lemon basil to decorate the dessert.
Method of making summer peach jelly with strawberries
To make peach-strawberry jelly, put a pot of water on the stove and bring to a boil. Put peaches in boiling water for 1-2 minutes. We put a bowl of cold water next to it, into which we transfer fruits from boiling water. After sharp cooling, the skins are easily removed from the fruit, thus peeling the tomatoes for harvesting.
We cut the skin on the processed peaches, carefully remove, cut the fruit, take out the seeds.
Add strawberries thoroughly washed and peeled from sepals. Choose berries that are ripe, sweet, without signs of spoilage and damage.



Grind the ingredients until smooth with an immersion blender. We put the pan on the stove, bring the fruit and berry puree to a boil, remove the pan from the heat.

Pour gelatin powder with cold water. At room temperature, gelatin will swell in about half an hour. When you see that there is no free water in the bowl, and the gelatin grains are swollen and almost transparent, you can mix the jelly ingredients.

Mix the soaked gelatin with fruit and berry puree, cooled to 80 degrees Celsius, mix thoroughly. If there are not dissolved grains of gelatin, then filter the puree through a fine sieve.
Leave the mass at room temperature for 5-7 minutes, add liquid honey. If the honey is very thick, just heat it in a water bath for a few minutes. Honey loses its beneficial properties at high temperatures, so add it to a slightly cooled mass.
Pour the mixture into a bowl or pour into molds. Put in the refrigerator for 2 hours. The size of the mold into which you pour the jelly determines the time of its hardening: the smaller the mold, the faster it hardens.



When the jelly hardens well, we take it out of the refrigerator and lower the bowl into a container filled with hot water for about 20 seconds to thaw from the walls. Then turn the bowl upside down onto a plate.

Cut the strawberries into thin slices. Decorate the peach jelly with chopped berries and a sprig of lemon basil with strawberries and serve.
