I propose to prepare for the winter a simple and delicious salad "Nezhinsky" from cucumbers, the recipe for which was in cookbooks about tasty and healthy food from the Soviet era. The classic combination of cucumbers, onions and dill with a hint of pepper is always a win-win. Delicious salad, goes well with boiled potatoes, ideal for complex side dishes. Overripe cucumbers are suitable for these blanks, well, do not waste the good! I advise you to peel overgrown ones, remove the seeds and then cook according to the recipe. Ordinary bow can be replaced with red, it will be bright! In winter, the salad "Nezhinsky" is just a godsend! Be sure to try cooking it.

Ingredients for salad "Nezhinsky"
- 1 kg 400 g of fresh cucumbers;
- 700 g of onions;
- 25-30 g green dill (young greens);
- 25-30 g table salt;
- 20-25 g granulated sugar;
- 100 ml vinegar 6%;
- bay leaf, black and allspice;
- spring water.
Method of preparing salad "Nezhinsky" from cucumbers for the winter
We soak fresh cucumbers for the "Nezhinsky" salad in cold water for 2-4 hours, rinse, cut off the ends. Cut the cucumbers into 4 mm thick circles.

Thoroughly wash the canning dishes, sterilize or dry them in the oven, boil the lids. At the bottom of each jar we put one bay leaf, a few peas of allspice and black pepper. You can also add a dill umbrella.
Fill the jars up to half with sliced cucumbers. We put vegetables quite tightly. If you put it loosely, then after filling with water, the cucumbers will float up and gather under the lid, and the bottom will be an "empty" brine.
Cut the onions into half rings or rings 2-3 millimeters thick. We put the chopped onion in the jars next to the cucumbers.



Clean dill, shake off the water. We cut into the "Nezhinsky" salad only tender greens without coarse twigs. Place the chopped dill in each jar.

We fill the jars with sliced cucumbers to the top.
Pour salt and granulated sugar equally into each jar. One half-liter jar needs about нужно teaspoon of coarse table salt and ½ teaspoon of granulated sugar.
Next, pour vinegar into the jars. You can use regular 6% vinegar or take apple cider vinegar or wine vinegar.
